1/2 tb Unflavored gelatin

1 c Diet ginger ale

1 c Cranberries,coarsely chopped

1/2 tb Fresh lemon juice

1 ts Grated orange peel

2 1/2 ts Sweetener or sugar

1/4 c Finely chopped celery

1/4 Medium apple, chopped

Sprinkle gelatin over 2 tb ginger ale; let stand 5 min to soften. Combine remaining ginger ale, cranberries, lemon juice and orange peel in a saucepan. Bring quickly to a boil. Remove from heat. Add softened gelatin and sweetener; stir until gelatin dissolves. Chill until partially set. Stir in celery and apple. Spoon into a rinsed mold. Refrigerate at least 4 hours until set. each serving about 1/2 cup 1/2 Fruit & Veg. Choice 6 g carbohydrate, 1 g protein (28 calories) Source: Choice Cooking, Canadian Diabetes Association 1986
