Ingredients
2	tablespoon	oil, olive
2	tablespoon	vinegar, cider
2	tablespoon	basil, fresh, chopped
1/2	teaspoon	salt
1/4	teaspoon	pepper
3	cup	rice, cooked, cooled
2	each	tomatoes, chopped
1	each	cucumber, seeded, chopped
1	each	onion, red, small, chopped

Directions:
In a small bowl, whisk together oil, vinegar, basil, salt and pepper. Add rice, tomatoes, cucumber and onion; toss. Serve chilled.
